<p><strong>Ingredients: (enough for 2 people)</strong></p>
<ul>
<li>1 cup plain flour</li>

<p><strong>Step 1</strong></p>
<p>Place all the ingredients in a large bowl or food processor and mix well, the dough should stick together if you press it with your fingers, the texture should be rather like uncooked rice. If it is too dry, you can add a little more water, or if it&#8217;s too sticky add a little more flour.<span id="more-1449"></span></p>
<p><strong>Step 2</strong></p>
<p>Mould the dough into a ball and leave it in the bowl, covered with a damp cloth, for around 10 minutes. The dust your worksurface with a little flour and knead the dough until it feels smooth, this should take 5-10 minutes.</p>
<p><strong>Step 3</strong></p>
<p>Now it&#8217;s time to roll out the pasta. Set the <a href="http://www.createfreshpasta.com/pastamachines" target="_blank">pasta machine</a> to its thickest setting. Take 1/3 of the dough and roll it out with a rolling pin so it&#8217;s thin enough to fit into the machine. Put the dough through the machine 3 times, turning and folding it each time. Turn the machine to its next setting (one notch thinner) and put the same piece of dough through the machine 3 times as before. Repeat this for all the width settings on the machine. The pasta will get thinner each time.</p>
<p><strong>Step 4</strong></p>
<p>By now you will have a long, smooth sheet of pasta. Place it on the table and cut it into your desired length, about 10 inches long. Sprinkle lightly with flour. Now pass the sheet of pasta through the cutters on the other side of the pasta machine. Set the width of the cut to your preference, for example a setting of 1/8&#8243; would give you linguini, 1/4&#8243; for fettucini. Turn the handle with one hand, using your other hand to catch the finished pasta.</p>
<p><strong>Step 5</strong></p>
<p>Place the finished pasta on a clean tablecloth, trying to keep the strands as separate as possible. Allow it to dry for an hour or so.</p>
<p>To cook the pasta, add 1 tablespoon of salt to a large pan of boiling water and cook for 2 to 3 minutes.</p>
<p><strong>Tips</strong></p>
<p>The following tips will help you to make perfect homemade pasta every time:</p>
<ul>
<li>Making coloured pasta is easy, simply add puréed tomato or spinach to the dough for red or green pasta. You can also make black pasta by adding squid ink.</li>
<li>When letting the dough &#8216;rest&#8217; before kneading it, make sure to cover the bowl with a damp cloth, or wrap the dough tightly in clingfilm so it doesn&#8217;t dry out.</li>
<li>There is no need to add oil to the pan when cooking your pasta. Stirring occasionally will prevent it from sticking.</li>
<li>Don&#8217;t cook your pasta for more than 3 minutes. Overcooking will ruin your pasta! Once cooked, eat it straight away with your preferred sauce, it should not be allowed to cool.</li>

			<content:encoded><![CDATA[<p>he inspiration for this Vegetarian Moussaka came after I had drawn a blank with many other vegetarian moussaka recipes. I love using butternut squash &#8211; it is both filling and nutritious. Therefore, using butternut as a base in this dish meant that there didn&#8217;t have to be as much bulky pulse added. The result is a very satisfying dish, rich in flavor and packed with nutrients.</p>
<p>With regards to roasting the butternut squash: peel the butternut. Next, chop the butternut into inch (2½ cm) cubes, discarding the seeds. Place the cubes on an oiled baking tray. Massage a little oil over the butternut cubes and roast them in a moderate oven for about 30 &#8211; 40 mins, until they are cooked. Simple!<span id="more-1439"></span></p>
<p>The greatest improvement in this Vegetarian Moussaka recipe is that the aubergines are not fried. I hate greasy food &#8211; but I love the taste of it! Baking the aubergines gives you the taste with minimal fat. In order to do this, grease a couple of large baking sheets. Slice 2 large aubergines into ¼ inch / 5 mm slices. Place the slices on the baking sheets in a single layer. Brush the slices with oil. Bake at 350° F / 180° C for about 20 minutes. Turn the slices over and cook for another 20 minutes. I usually prepare 4 aubergines like this and freeze the slices in between sheets of freezer paper. I haul them out to put on top of salads or into pasta sauce.</p>
<p>The ingredients seem endless &#8211; but everything can be prepared in advance. In fact, it is wise to make the tomato sauce the day before. It can even be made well ahead and frozen.</p>
<p>The addition of a teaspoon of mustard to the cheese sauce adds flavor and means that you can cut down on the amount of cheese.</p>
<p>A little effort<br />
Preparation time: 45 minutes, but everything can be done in advance<br />
Cooking time: ½ hour for moussaka<br />
Serves 6</p>
<p><span style="underline;">Ingredients:</span></p>
<p>4 cups roasted butternut &#8211; approx 1lb 4oz / 550g (see above for instructions)<br />
2 cups cooked brown lentils<br />
3 cups tomato sauce (see below)<br />
1 quantity white sauce (see below)<br />
2 large aubergines, cut into ¼ inch thick slices and baked (see above for instructions)</p>
<p><span style="underline;">Tomato Sauce Ingredients:</span></p>
<p>2 large onions, diced<br />
about 3 tablespoons oil<br />
2lbs / 900g tomatoes, chopped<br />
2 cloves garlic, crushed<br />
4 tablespoons tomato paste<br />
½ cup (loosely packed) parsley<br />
½ cup (loosely packed) coriander<br />
1 cup water<br />
½ teaspoon salt<br />
freshly ground pepper</p>
<p><span style="underline;">Cheese Sauce Ingredients:</span></p>
<p>2oz / 60 g butter<br />
2oz / 60 g flour<br />
2 cups milk<br />
1 teaspoon wholegrain mustard<br />
½ teaspoon salt<br />
1 cup strong cheese, grated &#8211; cheddar is a good choice</p>
<p>Use a large frying pan to make the tomato sauce. You will need a small pot for the white sauce and an oven proof dish for the Moussaka.</p>
<p>When you are ready to assemble, heat the oven to 350° F / 180° C.</p>
<p>Method:</p>
<ol>
<li><strong>To make the tomato sauce</strong>: fry the onions in the oil until they soften and begin to brown.</li>
<li>Add the garlic, tomatoes, tomato paste. Allow to simmer for about 5 minutes. Add the parsley, coriander, salt and pepper and slowly add the water. Allow to simmer for about 10 minutes until the sauce thickens. You may either blend the sauce or leave it so that it is chunky. This quantity yields about 5 cups.</li>
<li><strong>To make the cheese sauce</strong>: melt the butter in the pot. Add the flour and cook for a minute. Slowly add the milk, stirring constantly. Allow to come to the boil and thicken. Add the mustard, cheese and salt and cook for another minute. Keep aside.</li>
<li><strong>To assemble Vegetarian Moussaka</strong>: place the cooked diced butternut in the oven-proof dish. Sprinkle over the lentils. Spoon over 3 cups of tomato sauce. Arrange the aubergine slices on top. Spoon the cheese sauce over.</li>
<li>Bake at 350° F / 180° C for ½ hour. Serve with a big salad.</li>

The courses are led an offered by private companies and institutions, but monitored and certified by the state of Texas, which makes them a great choice for anyone who needs training.</p>
<p>Many classes can be found online for TABC certification. Some people are used to just going and sitting in a classroom to get their training, but online certification makes it a much more desirable choice for both businesses and employees. While someone might not be as readily able to travel to the next town over to sit through a certification course, they will likely be more than willing to complete the same course online as terms of their employment. 			<content:encoded><![CDATA[<p>ne of the best ways to prepare a quick meal is to use pasta.  This pasta recipe is ready in minutes, clean up is minimal, and the dish is very tasty.  Feed your family quickly, easily, and without &#8220;breaking the back of your food budget&#8221;.  Try this Fettuccine with Creamy Zucchini Sauce for an easy and tasty main course.</p>
<p>FETTUCCINE WITH CREAMY ZUCCHINI SAUCE</p>
<p>A simple but delicious pasta dish ready in about 20 minutes.</p>
<p>12 oz fettuccine<br />
2 tbsp olive oil<br />
1 1/4 lbs zucchini and/or yellow squash<br />
1 large garlic clove<br />
8 oz ricotta cheese<br />
salt to taste<br />
fresh ground black pepper to taste<br />
grated Parmesan cheese for garnish, optional<span id="more-1448"></span></p>
<p>Cook the fettuccine according to the package directions. When draining the pasta, save 1/2 cup of the liquid. Meanwhile, heat the olive oil in a medium skillet over medium-high heat. Cut the zucchini in half lenthwise then cut into half moon slices about 1/4-inch thick. Mince the garlic. Add half the zucchini to the skillet, flat side down, flat in the skillet. Cook until browned, 2 to 3 minutes, then turn and cook the other side a minute or two. Remove to a plate. Add more oil to skillet if needed and repeat the zucchini cooking process with the other half of the squash; add the garlic. Transfer these zucchini and garlic to the plate, also. Turn off the heat then add the 1/2 cup of the pasta water and the ricotta cheese to the skillet. Stir to dislodge and browned bits of zucchini from the skillet. Season with salt and pepper to suit your taste. (It is okay if the ricotta looks a little curdled.) Pour the drained fettuccine, vegetables and any juice that has accumulated on the plate, back into the skillet. Stir gently to combine all the ingredients together. Sprinkle pasta with the Parmesan cheese, if desired.</p>
