I always tell people that being diagnosed as diabetic didn’t take away my desire for sweets. You see, we diabetics enjoy having “sweets”, too. Here is a recipe that is suitable for diabetics to enjoy as dessert or when they crave a “sweet” snack. The Peanut Butter Chocolate Chip Bar Cookies are tasty and easy. And peanut butter is good for diabetics. Your local grocery store should have the sugar-free chocolate chips along side the regular ones. I buy Hershey’s Sugar-Free Chocolate Chips at my Walmart Store.

MAGIC COOKIE BARS

I know I have been making this recipe for my family for forty years. I hadn’t even thought of it as an old recipe until I ran across it in my late mother’s recipe files and realized how long I had been making it. These are excellent and make a perfect dessert for the office, church or other “pitch-ins”, or just to please your family. My family enjoys them made with chocolate chips or butterscotch chips. 20-year-old Recipe for French Chocolate Silk Squares

I believe this recipe came from a 1989 edition of Woman’s Day magazine but I can’t be sure. It was listed in the “Eating Healthy” section because it has 1 1/2 tablespoons of oat bran in every square. Each square also has 188 calories, 4 grams protein, 26 grams carbs, 9 grams fat, 0 mg cholesterol, and 130 mg sodium. That is pretty good numbers for a dessert! This is great for family meals, co-workers, holiday gift giving, bake sales, church potluck, etc. Who doesn’t love the idea of chocolate and healthy all in one? Give these French Chocolate Silk Squares a try today and see just how well healthy and chocolate can be together!

Old Fashion Recipes for Apple Pumpkin Custard Dessert and Southern Pecan Bars

Why not surprise your family, friends, co-workers, etc and break out of your mold this year. Try a new recipe or two–in fact, try an old recipe or two. And here are a couple of great ones to choose from. Both these recipes are from my vintage collection I inherited from my mother’s kitchen files. Apple Pumpkin Custard Desserts is a quick and easy recipe with impressive results (isn’t everything that’s made with Eagle Brand Milk delicious?). Southern Pecan Bars are excellent bar cookies that are perfect for just about anything from filling the family cookie jar to gift giving and co-worker treats.

APPLE PUMPKIN CUSTARD DESSERTS

I like to identify the sources of these old recipes when I can. However, that is not always possible. I believe, but cannot be sure, that this recipe is from an old advertisement for Borden’s Eagle Brand Sweetened Condensed Milk.

1 can (21-oz) Apple Pie Filling
1 can (16-oz) pumpkin (about 2 cups, if you cook your own)
1 can (14-oz) Eagle Brand Sweetened Condensed Milk (not evaporated milk)
2 eggs
1 tsp ground cinnamon
1/2 tsp ground nutmeg
1/2 tsp salt
1 cup gingersnap cookie crumbs (about 18 cookies)
