Economy, economy, economy! In our election cycle that we have just survived, economy was a word we heard constantly. And the reality is, we are in an economic squeeze. So most of us are looking for ways to prepare more meals at home. But in our busy society, these meals need to be not only economical but also quick and easy. Here are some recipes that should fill that need. Easy Taco Dinner is just what the name implies. It is a tasty, easy, quick, taco tasting meal. Want a vegetable to go with it? EASY TACO DINNER

This was on an old newspaper clipping in my mother’s recipe box. I have no idea where she got it. But it is good and easy, as the name states.

1 lb ground beef
1 large onion, chopped
1 envelope (1 1/4 oz) taco seasoning mix
1 cup water
1 pkg (12 oz) tortilla chips
1/2 head lettuce, shredded
2 med tomatoes, chopped
1 can (2 1/4 oz) sliced ripe olives, drained
1 cup shredded Cheddar or Monterey Jack cheese (about 4 oz)
2/3 cup sour cream

2 cups chopped cooked turkey

1/2 cup raisins

1/2 cup salted peanuts, chopped

1/2 cup chopped celery

1/4 cup chopped onion

mayonnaise

1/4 tsp curry powder

16 slices white bread

1 pkg (12-oz) American singles pasteurized process cheese food

Combine turkey, raisins, peanuts, celery, onion, and enough mayonnaise to moisten. Add curry powder; mix well. For each sandwich, cover a slice of bread with cheese slice. Top with turkey salad, second slice of cheese and second slice of bread.

1 cup dried lentils
1 cup finely chopped onions
1 tbsp olive oil
2 to 3 cloves of garlic minced, use amount to suit your taste
1 tsp ground coriander
8 oz pkg elbow macaroni
salt and pepper to suit your taste
1 tbsp butter
1/4 cup fresh minced parsley OR 1 1/2 tablespoon dried parsley flakes

I love digging through my vintage recipe collection and finding new (well old, really) recipes to try. Here are a couple that are perfect for the holidays but would be tasty treats at anytime of the year. This old-fashion gingerbread recipe is perfect for the holidays since it is quick, easy, and serves eighteen. The Scandinavian Almond Crescents make a wonderful treat for sharing with family, friends, co-workers, teachers, etc. They would also make a great “food” gift that’s sure to please. I hope you will enjoy these recipes.

SCANDINAVIAN ALMOND CRESCENTS

This recipe was cut from the back of an old Parkay margarine package.

1 container (8 oz)Soft Parkay Margarine
Sifted powdered sugar
1 1/2 tsps almond extract
2 1/4 cups flour
1/2 cup finely chopped almonds, toasted

Beat margarine and 1/4 cup powdered sugar until light and fluffy. Blend in extract. Add flour; mix well. Stir in almonds. Shape leve teaspoonfuls of dough into crescents; place on ungreased cookie sheet. Bake at 325 degrees for 25 to 30 minutes or until lightly browned. Remove from cookie sheet immediately. Cool 5 minutes; sprinkle lightly with additional powdered sugar.
